Over the past two decades, the Italian wine industry has witnessed a pivotal shift towards sustainable practices, prominently featuring the rise of natural wines. This paper explores how “naturalness” in wine is not merely an inherent quality but a construct shaped by the interplay of production, communication, and consumption. It seeks to understand the definitional boundaries and identity of natural wine through the practices and discourses of producers, critics, and event organizers. The theoretical framework employed treats the concept of natural wine as the result of positioning in a relational space, a social field in Bourdieu’s terms. This perspective helps understand the internal logics that dictate the behaviors of agents within the field and how they compete to define its boundaries. Through a variety of methods including in-depth interviews, ethnographies, and content analysis, this research illuminates how the boundaries of what constitutes “natural” are continually negotiated and contested by various stakeholders within the wine industry, producing an institutionalization of the field and the semantic space associated to it.
